You will need to make significant changes to multiple files and add all of the elements that make up the GUI. As well as handle all the event handling that the GUIs react to. Even then I am not sure if it would still be possible to just override them as some of it is embedded in the client files and those would require your players to download your custom version of epoch. Either way their declarations are here https://github.com/vbawol/DayZ-Epoch/tree/master/SQF/dayz_code/Configs/RscDisplay the rest of it I have no clue about so that would mean you got to search through the epoch files for the relevant parts.
